Preheat oven to 375 degrees. 2. Toss together zucchini, 1 tbsp olive oil, garlic, a generous amount of black pepper. Place mixture in a shallow baking pan and bake for 20 minutes. Remove from oven. 3. In a food processor or blender, combine chickpeas, tahini, 1 tbsp olive oil, and lemon juice. Add zucchini mixture and pulse a few times, leaving it kind of chunky. Stir in sea salt and black pepper, to taste. ;)
