Salsa Chicken


Ingredients

3-5 frozen boneless, skinless chicken breasts
1 can (15 oz. or larger) black beans, rinsed and drained
16 oz. salsa
2 cups frozen or fresh corn, cut off the cob
1 tsp cumin


Directions

1.  Place all ingredients in crock pot, mix a bit, and set on low.

2.  After about 5 hours take the chicken out and cube it, then throw it back in with a cup of instant brown rice, uncooked. Stir it up and continue cooking on low for about another hour.

3.  You can chop up an avocado and throw on top.  You can also make regular brown rice separately and added it in before serving, and that works well too.
